The plantations can cultivate coffee at up to 2,000 metres above sea level as they are protected from the frost by the hot dry winds that blow from the Mexican plains.
 
The flavour is uniquely sweet and satisfying. It is rich yet soft with fig and raisin notes and a lively citrus acidity.
